FEATURE: possibility of making `opencv` optional

Hey @TimoK93,

Your package is super helpful to us, we were wondering if it would be possible to make opencv-python optional?

For example py-ctcmetrics[viz] because it seems to be used only in the visualize.py

Currently, we are having trouble depending on py-ctcmetrics because opencv-python is a bit problematic since it comes with qt and binaries that breaks other packages.
