Support for Self hosted backed, either cloud or on premises

Feature Request:
In the spirit of open source, I'd love to see a configuration or deployment version where OpenEDR can be configured to phone home to a locally self hosted server, or self hosted cloud server. The ability to control where that endpoint data is being sent, and the transparency about it would go along ways to giving credit to the "Open" in OpenEDR
