Handle the rollups better, decide on what should be in them.

The rollups contain most of the src/*.js files but none of the gis files which are in the leaflet & maplibre directories.

So this issue incudes:
- Be clear of what the rollups should contain. I like having just the model & view files, no gis
- Update rollups to have the appropriate files for this.
- This may lead to better defined repo dirs, maybe moving demos & gis to their own repos?
