In Optimize 7, update Camunda 7 dependency to latest 7.21 patch

Camunda 7.20 will be out of maintenance in April.

Acceptance Criteria (Required on creation)

• Camunda 7 maven version is updated to 7.21.X : https://github.com/camunda/camunda-optimize/blob/master/optimize/pom.xml#L15
• Default Camunda engine is set to 7.21.0/X: https://github.com/camunda/camunda-optimize/blob/master/optimize/pom.xml#L14
• Compatibility tests are green (ci:daily)
• Camunda 7.20 references are removed and refactored.
• Docs for supported versions are updated

@tasso94, I think we should bump Camunda 7 version in Optimize after 7.20 is EOL. In the past, renovate have done at least patch updates but Camunda 7 is excluded in the configuration now.
