[Enhancement]: Feat: Inline mongo-db Helm chart

What features would you like to see added?

There have been a lot of issues with bitnamis images and their charts after they have started transitioning into a paid service. This is described here: bitnami/charts#36326, amongst other places.

I think the best solution for librechat is to host mongo db charts yourself. You can still copy these manually from bitnamis github repository, but not from their docker registry (at least not reliably).

I have made a PR where i manually inline the mongo db charts pulled from bitnamis github repository. This seems to work. Long term we might consider hosting the charts ourself on a docker repository.
