Move to `/api/v2`

Status Quo

The ENLYZE Python SDK is built on top of now deprecated production-runs-service and timeseries-service.

Goal

We want to migrate the ENLYZE Python SDK to /api/v2, which is documented here.

Acceptance Criteria

• All data is fetched from /api/v2
• API clients for both services have been unified
