Test hook does not run Catch2 unit tests

This project contains Catch2 unit tests, but the build and test hooks do not cover them.

Is that intentional? Should we run those tests at all?

Compiling the unit tests should be handled as part of #2282. The test hook should be handled by this issue.

Please investigate.

There are some things that will need to be done to make this work.

1. The tests are designed to run against AWS but to do so you need the keys shared somehow.
2. To run against MinIO, the https references would need to be updated to http.
3. In both cases, the unit tests rely on the aws CLI to setup and cleanup tests. That would need to be installed and configured.

I also believe one test is failing for MinIO. I believe it has to do with the STS date setting.
