Doc: multi-repos example

I couldn't find a complex example using multi-repos in a single prek.toml file on the prek documentation site. Neither the Usage nor the Getting Started section includes one.

Mixed use of built‑in and self‑defined commands across multi-repos is a frequent need, so an example would be useful for beginners (and for users new to TOML as well)?
