Problem

This cookiecutter might be subject to changes pulled from upstream.

Proposed Solution

To make sure this cookiecutter correctly bootstrap the extension, we could add a UI test that would take a screenshot of the JupyterLab Launcher.

And change the cookiecutter so it adds a new fake kernel as an extension, for example based on the JavaScript one but with a different name / logo.
