Is Tahoe the last version of macOS for Hackintosh?
How long will it be usable after support ends?

macOS 26 is the last version supporting Intel Macs. MacOS 26 will get Apple security updates three more years. After that, the last round of supported Intel Macs will transition to Apple's obsolete device list. No hackintosh support to macOS 27. The closest you can get is VM and other than that Asahi Linux for m1 and m2 Apple silicon Mac models and don't even try Asahi Linux in your m1/m2 Mac if you intend to also try macOS 27 DB1 because Asahi support alongside macOS 27 is currently broken.
