Keeping discussions open for 2 weeks in general

I just updated the README to say discussions will stay open for about 2 weeks in general before they are marked as answered (to give people on vacation some time). If people think that's too long/short, just let me know.

Obviously something that's being actively discussed can stay open longer if the conversation goes longer than that (but hopefully it won't 😅).
