Add an explicit threshold in codecov coverage to avoid false positives

For example here the diff coverage is 100% but, maybe due to a change in the total number of lines, the project coverage dropped by 0.01% causing the action to fail. We should therefore introduce more lenient thresholds allowing a marginal drop in project coverage.
