Format logs as JSON

Hello folks,

Would be nice if it was possible for Sourcebot to generate logs in JSON.

The use case is to be able to send logs to a dedicated system like Elastic/Loki/... without implementing a custom parser.

Hey @gaeljw! We already support outputting structured JSON logs. Take a look at these docs: https://docs.sourcebot.dev/docs/configuration/structured-logging

Well, actually, it doesn't work as I expected. The logs lines are not valid JSON as they are prefixed with the "service":

And also some log messages expand on multiple lines:

I'd expect each line to be a valid JSON object.
