fix: enable HTTP/2 with undici agent

For certain proxy scenarios, openai client may downgrade to HTTP/1.1, which ends up adding unneeded jitter to the event stream.

This PR follows openai documentation to use a proxy agent from undici and enable HTTP/2.0.
