Change default symbol visibility on non-win platforms

Because of the pip ecosystem being sloppy about tracking non-python deps, it might be a good idea to adjust the default symbol visibility on linux and mac in order to prevent issues like CoolProp/CoolProp#2512 (comment) and CadQuery/cadquery#1799 (comment)

I cannot reproduce it with cadquery_ocp on my ubuntu 22.04 machine (both in a new empty virtual env)

@adam-urbanczyk I will set visibility to hidden in the future 7.9 release, but not sure what it should resolve.
