What does this PR do?

Updated Readme
Updated the .env.example file. Now, only PROJECT_ROOT needs to be set and the others are optional. (This caused the HF issue before).
Add caption templates (they went missing?)

Confirmed with fresh install that now all tests should pass for new users after cloning repo, installing uv pkg, changing PROJECT_ROOT.
