About Replicate Demo

Awesome work on olmOCR-7b! This PR enables olmOCR-7b deployment on Replicate through two channels:

• Web interface: lucataco/olmocr-7b
• API endpoint: lucataco/olmocr-7b/api

Happy to create an organization on Replicate for Ai2, and move the model location under your org so you have control over the demo examples and Readme. Also happy to help maintain and keep the model updated 🤗

Closing as we have a new model now, I'll still need to read into Replicate to see if that's a direction we'd like to try.
