WIP docker: lightweight setup

The goal is to have a docker setup, as lightweight as possible.

TODO:

• Replace broker, schema-registry and zookeeper with a single Redpanda service
• Replace MySQL with H2 (embedded in GMS service)
• Elasticsearch ?

Checklist
