Add PokerOdds AI to navbar; fix icon rendering issue

Description

This Pr updates the documentation and configuration to add a new section for the PokerOdds AI app. The changes include renaming and modifying the documentation file for PokerOdds AI and updating the navigation configuration to include a link to this new section.

Documentation updates

• Renamed the PokerOdds AI documentation file from src/pages/pokerodds-ai/index.mdx to docs/pokerodds-ai/index.mdx. Updated the file to include a tags metadata field, adjusted the image styling (e.g., margins and size), and changed the image source path to pokerodds-ai-app-icon.png.

Configuration updates

• Added a new navigation entry for PokerOdds AI in docusaurus.config.js with the label "PokerOdds AI♥️" and a link to the updated documentation.
