chore(ci): add comprehensive debugging to version detection

- Add detailed logging for PR title/body inputs
- Log each version marker check (bracket, hashtag, text)
- Show final decision with release type
- Add verbose version calculation with before/after values
- Will help diagnose why v3.x versions were created

refactor(ci): rename skip-unit-tests to skip-bdd for clarity

- Changed flag name from skip-unit-tests to skip-bdd
- Both workflows now have skip-bdd and skip-e2e flags
- Clean, independent control for each test type
- BDD tests check skip-bdd flag
- E2E tests check skip-e2e flag
- Future-proof for independent control
