Update the MNIST data link.

The original link from Yann LeCun's website has removed the dataset:
http://yann.lecun.com/exdb/mnist/

Let's use the Kaggle version instead:
https://www.kaggle.com/datasets/hojjatk/mnist-dataset

This seems okay, but better yet would be a link to the original data hosted by NIST itself if we can find it. Have you looked into this at all by chance?

@rossbar I could not find the original data hosted by MNIST, and the Kaggle version is one of the closest versions I could get.

Sounds good, thanks for checking! Let's not let perfect be the enemy of good then and get this in - I know (from experience) that we don't want to be driving traffic to over-taxed servers in the interest of being good citizens of the web. Thanks @star1327p !

We really need to add a linkchecker CI job as this is very ad-hoc.
