Update build matrix to include OpenSearch 2.19.1 and 3.0.0

it says "2.10.x and above" for the client - but is that also true for opensearch-java 3.0.0 which contains breaking changes? should this maybe be >= 2.10, <3? at least until #462 is merged (which i presume to be a breaking change?)
