Recent versions of keycloak changed the ENV var names.

The templates for the env files were updated accordingly.
A few small typos were also fixed in the compose documentation.
The official supported Version of PostgreSQL for keycloak is 18, as stated in https://www.keycloak.org/server/db.
So the compose examples were updated accordingly.
