Migrate CV build from Jekyll to Vite

Summary

• migrate local build/dev workflow to Vite
• add custom markdown pipeline with frontmatter + existing Liquid compatibility for include and page variables
• preserve current look by keeping existing screen/print styles and foundation icon assets
• add Tailwind/PostCSS scaffolding for later styling work
• apply mobile stage-1 polish (smaller name/section headings, better header date placement, tighter page margins)

Notes

• legacy Jekyll files are intentionally kept for now during staged migration
• markdown source of truth remains index.md

Validation

• JS config/plugin syntax checked locally
• full package install/build requires network-enabled environment
